Tuscan White Bean Dip

A simple and amazingly delicious appetizer, this recipe is chock full of health benefits & flavor!



Ingredients

2 15-ounce cans of white beans (cannellini beans)

2 large cloves of garlic

1-2 tbsp of fresh lemon juice

1/2 tsp of lemon zest

4 tbsp extra virgin olive oil (1/2 tbsp for roasting garlic, the rest for finishing)

2 tbsp fresh chopped parsley (reserve a pinch for garnish)

1 tbsp chopped fresh thyme, or 1 tsp dried thyme

Kosher salt and pepper to taste


How to make this

  1. Set oven to 400°F

  2. Place garlic cloves (unpeeled) on a piece of aluminum foil, drizzle with 1/2 tbsp olive oil, wrap in foil and place in oven for about 30 min. When done, peel garlic to combine with remaining ingredients.

  3. Drain the beans, but reserve the liquid. Reserve a few beans for garnish.

  4. Combine beans, thyme, parsley, lemon juice, lemon zest, roasted garlic, olive oil, salt and pepper in food processer to desired consistency.

  5. To adjust flavor, add lemon juice, salt, or pepper to taste

  6. To adjust consistency, add some bean liquid

  7. Garnish with a dash of olive oil, parsley, and reserved beans


How to serve

Serve with your favorite veggies, whole grain crackers, or pita bread.
