The hardest part of this recipe is folding the omelette!
Ingredients
3 eggs
splash of milk (or water)
2 oz goat cheese
1 cup spinach
7 grape tomatoes
1/3 tbsp olive oil
fresh garlic, minced (to taste)
salt and pepper (to taste)
How to make this
In a medium bowl, scramble eggs and mix with milk, salt, and pepper.
Heat a pan with medium heat, and add olive oil and garlic. Sauté for 1 min.
Add tomatoes and let them heat up until they pop.
Add spinach to pan and sauté until barely wilted.
Lower heat to med-low, add egg mixture and cover until it is cooked through.
Add goat cheese on one half of the omelette a minute or two before it's done cooking. Fold the omelette over the cheese. Cook 1-2 minutes more.
